The World’s Easiest Bran Muffins

2 cups bran flakes
1 cup milk
½ cup brown sugar
½ cup vegetable oil
½ cup honey
3 eggs
1 cup flour
1 teasp. baking soda
½ cup raisins or chopped dates.

Preheat oven to 400 degrees.
Mix everything together in a large mixing bowl.
Then use a mixer or blender and mix for 5-7 minutes.
Pour into paper lined cups. (I use Pam sprayed cups and a Teflon muffin pan)
Bake 20 minutes.

Enjoy!!

  1. I'm a big fan of bran muffins. I'll even put the bran buds (cereal) in there. As I age, I'm finding that fiber if my friend.

  2. I'd have to go with the raisin version. Never did develop an appreciation for dates.

  3. This bran muffin recipe sounds great! I am forever tweeking my bran muffin recipe...yours has more eggs...

I've found that spraying the muffin tins with Pam is the superior method. Especially if you like to freeze some muffins for later- the paper gets mucked up and is hard to peel off.

  5. Well... aren't we the healthy little blogger today !
These sound good but as I am trying to be gluten/nightshade free for 6 months, these are not on my diet !
If I could have them I would put dates in them ! no honey but lots of dates !

    cheers, parsnip

  7. Looks delish! LOve that you didn't skimp on the whole milk or whole eggs. I'm sick and tired of anemic homemade concoctions.
